THAI STYLE CORN FRITTERS / CUCUR JAGUNG ALA THAI


Last night I made Chicken and Corn Soup for dinner, have extra corn, some I did the sweet broth and  some these fritters. Recipe adapted from tesathome. I'm quite curiuos to taste the Thai version of corn fritters and made this try. Tasty and delicious, serve best with cucumber salad.

INGREDIENTS
4 Fresh corn- cut out the kernels and reserved / 4 tongkol jagung
2 tbsp Thai red curry paste / 2 sdb pes merah Thai
1/2 cup flour / 1/2 cawan tepung
3 tbsp corn flour / 3 sdb tepung jagung
1 large egg / 1 biji telur
1 tsp salt / 1 sdt garam
2 tbsp oyster sauce / 2 sdb sos tiram
1 tsp white pepper- ground / 1 st lada sulah
4 coriander roots- crushed to paste / 4 akar daun ketumar dijadikan pes
4 cloves garlic- crushed to paste / 4 ulas bawang putih dijadikan pes
Oil for frying / Minyak secukupnya untuk menggoreng.
Put corn kernels in the food processor. Add all other ingredients except oil and combine them together to from a thick paste. If it is so runny, add more flour.  and blend for 5-10 second ONLY to just break them. Let some part smooth, some part still intact. / Satukan semua bahan kecuali minyak dalam food processor. Jadikan sebahagian hancur dan sebahagian lagi kasar-kasar.
Heat the oil in the deep bottom pan over the medium flame; use your hand to slowly drop about 2 tbsp of batter in each time. Fry the cutlet until crispy and golden brown./ Panaskan minyak dan jemput-jemputkan jagung dan goreng hingga kekuningan.

Tidak jauh beza dengan resipi cucur jagung kita cuma yang menarik tentang resipi ini ialah ia tidak menggunakan air. Jagung dimasukkan dan processor dan digaul rata dengan bahan-bahan lain. Separuh daripada jagung itu dibiar begitu aje supaya rasa jagung dapat dikekalkan. Cucur ini dimakan bersama dengan salad timun atau acar timun. Satu kelainan yang menarik dicuba.
