SUNDAY LUNCH - NYONYA SET LUNCH NYONYA FISH CURRY STIR FRIED ASPARAGUS WITH STRAW MUSHROOM AND CHINCALOK CHICKEN





I am going to make this short and straight away with the recipes. My No:4 daughter Myraz spained her ankle during her netball practiced and I have to nurse her. I made simple lunch today, Nyonya Fish Curry, Stir Fried Asparagus With Straw Mushroom and Corn and Cincalok Chicken again.

STIR FRIED ASPARAGUS WITH STRAW MUSHROOM AND CORN
This asparagus recipe combines asparagus with other vegetables in an easy stir-fry. A light soya sauce glazes this asparagus Chinese influenced dish. It's simple, fast and delicious.
INGREDIENTS

  • 1 handful. asparagus / 1 genggam asparagus dipotong 1 1/2" panjang
  • 8  straw mushrooms halved / 8 keping cendawan straw belah dua
  • 1/2 cup fresh medium-size shrimp-shelled / 1/2 cawan udang hidup dibuang kulit
  • 1 cup baby corn julienned / 1 cawan anak jagung dipotong memanjang 
  • 5 cloves garlic - chopped / 5 ulas bawang putih dicincang
  • 2-3 Tbs. peanut oil / 2-3 sdb minyak
  • 2 Tbs.  oyster sauce / 2 sdb sos tiram
  • 1 Tbs. fish sauce (nahm bplah), to taste / 1 sdb sos ikan
  • A sprinkling of ground white pepper / lada sulah
  • 1/2 tbsp cornflou mix with 5 tbsp water  / 1/2 sdb tepung jagung bancuh dengan 5 sdb air
  • 1/2 cup stock / 1/2 cawan stok
  1. Heat a wok over high heat until it is hot and beginning to let off smoke. Swirl in the oil to coat the surface and wait 10-15 seconds for it to heat. When hot, stir in the garlic and follow with the shrimp. Stir-fry 15-20 seconds, or until the shrimp starts to turn pink. Add in stock. Toss in the asparagus and stir-fry half a minute. Add the mushrooms and baby corn and continue to stir-fry another 20-30 seconds. Sprinkle in enough oyster sauce to lightly coat the vegetables. Stir-well. Then add enough fish sauce to season to taste. Cook until the asparagus is a vibrant green color, tender but crisp./ Panaskan minyak tumis bawang putih sehingga nauk baynya. Masukkan udang dan biarkan 15-20 saat sehingga udang berubah warnanya. Masukkan stok. Masukkan asparagus dan masak 5 minit. Masukkan cendawan dan jagung terus kacau. Masukkan sos tiram dan sos ikan.
  2. Sprinkle with white pepper, and add in cornsflour, stir and transfer to a serving platter. Serve warm with other dishes in a shared family-style meal./ Masukkan lada sulah dan akhir sekali masukkan bancuhan tepung jagung biar sebentar dan janganterlalu lama jika mahukan asparagus yang ranggup. Padamkan api, angkat dan hidang.

Entry hari ini agak lewat sedikit dah masuk pagi, saya agak kalut sedikit kerana anak ke empat saya Myraz terseliuh kaki dek latihan netball dekat sekolah. Saya terpaksa bawa ke klinik, buat pemeriksaan takut patah atau luka dalaman. Hari ini kena jadi nurse layan orang sakit di rumah. Apa pun sempat masak makanan tengah hari ala Nyonya iaitu Kari Ikan Nyonya, Asparagus Goreng dan Ulang Tayang Cincalok Ayam. Nampaknya anak-anak saya sudah jatuh cinta dengan cincalok ayam, jadi kena buat lagi hari ini atas permintaan ramai.

Sayur asparagus ini saya goreng ala China dimana saya campurkan dengan cendawan dan jagung muda. Sedap, manis dan rapuh. Ka;au nak yang ranggup pastikan asparagus dimasak jangan terlalu lama.
