SATURDAY BREAKFAST IDEAS - DRIED WANTON MEE AND PUMPKIN PANCAKE

Saturday 12th March 2011, the beginning of 1st term School Holiday. Ya..... holiday for the children but not for Mom, we will be busier as ever. I have my own plan for this holiday and weekend. I just bought a book on our former PM, Tun Mahathir,- The Doctor In The House, plan to grasp the whole book with my speed reading this week end. So heavy breakfast will be a good idea to get less distraction from the children - Dried Wantan Mee and Pumpkin Pancake. The recipe for Wantan Mee is for one serving. This is to make it easier since the wantan mee came in a small bundle for 1 serving : A bit taxing any how the children really love this noodle. It is a popular hawker's food but unfortunately quite difficult to find the 'halal" version. so giving no choice I have to prepare it. There are two version of Wanton Mee, - the chicken and roasted meat version. I prefer the chicken version  coz it helps sweeten the soups.

For the wanton soup, I made a short cut, instead of using fresh shrimps or fish I used the ready made fish balls and wrapped it with the wanton wrappers. (See my entry on Wanton Bag for details). To make life much easier just get the ready made roasted meat. All you need to do is to blanch the noodles and the vegetables and prepare the soup. Try this..... delicious....

INGREDIENTS


1 small bundle of Chinese egg noodle, slightly loosen the strands/ 1 mee wanton
2 - 3 stalks of Chye Sim  or any favourite vegetables, cut into shorter length - I used Mini Green Mustard / 5-6 batang sawi kecil
A pot of salted water (to blanch noodle and vegetables)/1 periuk air garam untuk celur sayur
A pot of iced water (to chill-bath noodles)/ 1 periuk kecil ais untuk sejukkan mee 

Condiments for egg noodle of each serving (for tossing):
1 tablespoon of fried shallot oil or sesame oil / 1 sdb minyak bawang goreng atau minyak bijan
1 tbsp of light soy sauce / 1 sdb kicap cair
1/2 tbsp of oyster sauce / 1/2 sdb sos tiram
1/2 teaspoon of dark soy sauce / 1/2 sdt kicap pekat
3 tbsp wanton soup / 3 sdb soup wantan


PREPARATION

  1. Bring a pot of water to a boil  In the meantime, prepare a clean serving dish and add the listed condiments (in any order) on the serving dish. Set aside the dish./Masak air dalam periuk. Sementara menunggu air mendidih masukkan semua bahan perasa ke dalam sebuah bekas. Letak tepi.
  2. When the pot of water is boiled, add in the loosen strands of egg noodle to blanch for 2 minutes, or until al-dente. / Apabila air mendidih celur me selama 2 minit.
  3. Then, quickly transfer the blanched noodle to plunge into a large bowl of cold water using a wire strainer, for 10 seconds. Thereafter, return the noodles to the hot water again for 5 seconds. Remove from pot and drain on the same strainer before placing it on the serving dish filled with condiments. May also add 1 tablespoon of soup on the serving dish, if find it too dry. Toss the noodles with condiments till well combined./Alihkan mi ke dalam bekas air sejuk menggunakan tapis selama 10 saat. Masukkan semula mi tadi kedalam air panas tadi selama 5 saat lagi. Masukkan mi tadi ke dalam bekas perasa. Gaulkan dengan bahan perasa sehingga rata.
  4. Arrange shredded chicken and vegetables on the side of the dish. Serve noodle dish with a bowl of piping hot wonton soup./Letak mi dalam pinggan hidang. Letakkan  ayam dan sayur serta bawang goreng.
  5. Sprinkle with fried shallot. Serve with Wanton soup./Taburkan bawanggoreng dan hidang bersama soup wantan.
Wanton Soup

20 pieces wantan wrappers / 20 keping kulit wanton
20 pieces fish balls / 20 keping bebola ikan
screwpine leaves / daun pandan.
1/2 chicken / 1/2 ekor ayam
2 string spring onion / 2 batang daun bawang
1/2 chicken cubes / 1/4 kube ayam
salts and pepper to taste./ Lada dan garam secukup rasa.

Boiled water and simmer the chicken till done. Remove and cool chicken. Sheredded the chicken and put aside. Return all chicken bones to the soup and continue to simmer. Add salts, chicken cube and pepper / Rebus ayam hingga empuk. Angkat, sejukkan dan siat-siat seperti membuat soto ayam. Letak sebelah. Masukkan semula tulang-tulang ayam ke dalam sup.Masukkan lada, kube ayam dan garam secukup rasa
Wrap the fish balls with wantan wrappers. Seal like a pouch bagg using the screwpine. (See my entry on wantan bag). Add in wantan bag in the soup together with spring onions. Heat up before serving / Bungkus bebola ikan dengan kulit wantan. Ikat dengan daun pandan. Masukkan bebola ikan dalam sups. Renehkan beberapa minit dan hidang bersama wantan mi.

Hari ini bermula cuti penggal, seperti biasa cuti buat anak-anak tetapi hari yang biasa buat ibu-ibu, malah masa cuti ini masa yang paling sibuk melayan kerenah anak-anak. Rasanya masa cuti ini periuk belanga di dapur makin kuat bunyinya. Masa ni lah berbagai permintaan anak-anak terpaksa dilayan. Untuk hari ini saya sudah mendapat order dari anak-anak, mereka berhajat sangat nak makan wantan mi. Wantan ini memang makanan "hawkers food" tetapi nak dapatkan yang halal payah sekali. Biasanya Wantan Mi ini akan dimakan bersama ayam ataupun daging panggang. Untuk ringkas saya buat ayam aje. Air rebusan ayam saya jadikan wantan sup. Nak mudah lagi wantan sup ni pun saya buat short cut. Saya punjutkan aje bebola ikan ke dalam kulit wantan. Semua saya cari jalan pintas. Tak kisah janji sedap.

Resipi wantan ini lebih sedap jika disediakan sedikit-sedikit, jadi saya buat satu persatu dan sediakan mi nya mengikuti  gumpalan mi, gaulkan dengan sosnya. untuk ini saya tak buat short cut kerana tidak ada shortkan untuk mengaulkan mi. Kepada yang suka pedas boleh la buat cili jeruk atau sambal.



Saya cadang nak baca buku ini hujung minggu ni, so hujung minggu ni masak simple-simple aje. SELAMAT BERHUJUNG MINGGU.
