KUIH BOM KELEDEK


It's Sunday afternoon and it's raining heavily outside. Good for afternoon nap, but it's not me, I'm not the kind who took afternoon nap. Finished my assignment, completed all the Sunday's papers and nothing else to do I started to crave for something sweet. Got some sweet potatoes in the kitchen, rushed to the near by store to get some fresh grated coconut for my Sweet Potatoes Kuih Bom. Out of blues I felt like having this kuih. 

Sometimes back I posted this kuih, but that was a glutinous rice flour version, this was sweet potatoes version, ingredients were the same except the sweet potatoes. Instead of glutinous rice flour I used sweet potatoes for the skin. Just to make sure I got the right recipe, I browsed the net I found the recipe from Lily's Wai Sek Hong.


For The Filling
1 cup grated coconut/ 1 cawan kelapa parut putih
1/4 cup or more dark brown sugar(adjust sweetness to your liking) - cook it with/ 
1/4 cup water until sugar dissolves./ 1/4 cawan gula merah masak bersama 1/4 cawan air sampai gula hancur. 
Pandan leaves(optional)/ daun pandan

For the dough
2 1/2 - 3 cups of sweet potatoes/yams - mashed(Bake or microwave to cook them, do not boil unless using yellow or purple sweet potatoes)/ 2 1/2 - 3 cawan ubi keledek yang dilecek.
1 cup all-purpose flour/ 1 cawan tepung serba guna
1 cup glutinous rice flour/ 1 cawan tepung pulut
1 cup water plus a pinch of salt/ 1 cawan bercampur garam
sesame seeds/ bijan
Vegetable oil for frying/minyak untuk menggoreng.
PREPARATION
To cook the filling:
Mix grated coconut, sugar solution and pandan leaves(if using) and cook over the stovetop or in the microwave until well combined and thickened slightly./ Campurkan semua bahan inti dan masak atas api kecil sehingga pekat dan agak kering. 


Remove the pandan taste and adjust sweetness./ Buang daun pandan rasa kemanisannya.

Cool before using. / Sejukkan dan letak sebelah.

To make the dough:
Mix the all-purpose flour and the glutinous rice flour together with the mashed sweet potatoes./ Campurkan semua tepung dan ubi keledek. Gaul rata.
Add in water a little at a time until a dough forms.  Knead until it is smooth./ Masukkan air dan uli rata.
Divide dough into 1 inch balls. / Bahagi kepada beberapa bahagian sebesar 1" bola

Flatten a ball and fill with 1 tsp of coconut filling, bring the edges together and seal well./ Leperkan dan letakkan inti kelapa tadi. Kemaskan bebola.

Repeat until all the balls are done./ Ulangi proses sehingga habis

Heat vegetable oil / Panaskan minyak.
While oil is heating, drop one filled ball at a time in a bowl of water, then roll it with sesame seeds.  Continue this procedure until all filled balls are done./ Sementara minyak panas, golekkan bebola keledek tadi ke atas bijan, buat sehingga habis semua.
Deep-fry the balls until golden brown.  Do not crowd otherwise the balls will be soggy./ Goreng cara deep fry sehingga kekuningan.

Serve balls slightly warm or at room temperature./Sedia dihidang panas-panas.

Cadangan asal petang minggu ni nak rehat-rehat sambil membaca dan buat kerja office, tetapi dik kerana hujan lebat diluar, tu mula la tekak ni mereka nak benda-benda manis. Apa lagi terus ke dapur proses keledek untuk buat kuih bom, lari ke kedai beli kelapa parut untuk buat intinya. Dalam entry saya terdahulu ada saya buat kuih bom, tapi saya tidak menggunakan keledek, saya guna tepung pulut. Yang ini saya gunakan keledek. Rasanya kurang liat seperti kuih bom yang awal tu. Resipi ini saya ambil dari blog Lily, nampak kuih bom keledeknya cantik, golden-golden gitu, terus bookmark dan hari buat. Memang sedap makan panas-panas, kena dengan Nescafe Tarik, hujan....hujan  pula tu..perghh.....
