MEE SIAM


Mee Siam

I haven't made this for quite sometime. Doesn't seem to be favorite among the children. When come to Meehoon the children preferred, the Singapore Meehoon or the Soya Sauce Meehoon. Anyhow this time around I managed to convinced the children of my choice.

Mee Siam or “Siamese noodles” is basically spicy fired rice vermicelli with various toppings such as shrimp, chicken, fried firm tofu, and shredded omelet. Mee Siam is usually served with sambal ikan bilis.


INGREDIENTS
1 packet Meehoon soak / 1 paket bihun direndam
1 cup fresh shrimps / 1 cawan udang hidup
2 cups bean sprouts / 2 cawan taugeh
1/2 cup chives / 1/2 cawan kucai
1/2 cup tochew / 1/2 cawan tochew
2 fresh tofu fried and slice / 2 tauhu goreng dan potong dadu
2 fresh red chilies sliced diagonally/ 2 biji cili merah potong menyerong
2 eggs - make an omelete and slice thinly / 2 biji telor buat telor dadar dan potong nipis-nipis.
1 stalk cilantro sliced thinly / 1 tanngkai daun sup potong nipis
1 stalk spring onion sliced thinly/ 1 tangkai daun bawang potong nipis-nipis
fried shallot for garnishing/bawang goreng untuk taburan.
1/2 cup oil/ 1/2 cawan minyak
1 sliced onion / 1 bawang besar dimayang halus

Blended Ingredients
15 dried chilies / 15 chili kering
2 onions / 2 bawang besar
7 cloves garlic / 7 ulas bawang putih
5 tbsp dried shrimps / 5 sdb udang kering

Blend all ingredients to form a paste./ Blend semua bahan.

Seasoning
3 tbsp tomato sauce/ 3 sdb sos tomato
5 tbsp soya sauce / 5 sdb kicap
sugar and salts to taste/garam dan gula secukup rasa

METHOD

  1. Soak the vermicelli in warm water for about 30 minutes or until they turn soft. Drain and set aside. Using a food processor, grind the spice paste and set aside. Heat up a wok with some oil and make the beaten eggs into an omelet. Fold and slice the omelet thinly. Set aside./ Rendam Meehoon sekurang-kurangnya 30 minit. Blend semua bahan giling dan letak sebelah. Panaskan minyak buat telur dadar dan potong nipis-nipis, letak sebelah.
  2. Heat up the wok and add  oil. Once the oil is heated. fry the sliced onion and spice paste until aromatic and the oil separates. Add shrimps  stir-frying until half done, then add the fried tofu pieces./ Panaskan minyak dan tumis bawang besar yang dimayang sehingga kekuningan. Masukkan bahan giling dan tumis sehingga naik baunya. Masukkan udang dan kacau hingga separuh masak, masukkan tauhu.
  3. Add the vermicelli and keep stirring until the the spice paste has spread evenly. Add sugar and salt to taste, follow by tochew, bean sprouts and chives. Continue to stir-fry until the vegetables are cooked. Taste and adjust the seasoning by adding more salt or sugar to taste. If the noodles taste bland, add a little soy sauce tomato sauce to taste./Masukkan Meehoon dan terus kacau. Masukkan gula, garam, tomato sos dan kicap secukup rasa.
  4. Transfer the Mee Siam onto a big serving bowl and garnish with the omelet strips, chopped scallions, chili and fried shallots. Serve immediately./ Angkat danletakkan dalam pinggan hidang. Taburkan bahan-bahan hiasan.

Sudah lama benarlah saya berhajat nak makan Mee Siam ini, jarang membuatnya di rumah kerana kurang mendapat sambutan daripada anak-anak. Anak-anak lebih mengemari Meehoon Singapore dan Meehoon Kicap. Mee Siam ini enak dimakan dengan sambal ikan bilis. Dalam resipi saya ini saya tidak blendkan tochew dengan bahan giling tetapi sebaliknya memasukkan tochew sebiji-biji bersama bahan lain, ini menambahkan rasanya yang masam-masam dan manis.
