HOME MADE LASAGNA NOODLES BY MY GUEST POST TYCA




Am thinking of introducing guest post column in  my blog. I feel its good to get my foodie blog friends to share their awesome cooking. To start with I asked my daughter Tyca to share me her signature Pasta Noodles recipes.

Tyca is in her final year studying psychology in Nottingham University. Love cooking but its hard to get her in the kitchen unless in an extremely emergency situation..ha.ha..She loves pasta and this she learned from her aunty. 

Easy to make recipe. She skipped the boiling part..but instead used it straight. A short cut way...but its good to boiled first. So here's how she made it and thanks Tyca for sharing. Best to use the pastry roll machine which is only less then RM20..from the superstore. The roll machine will make your pasta roll evenly.




Homemade Pasta Noodles

  • 2 1/2 Cups All-purpose Flour
  • 2 Large Eggs
  • 3 Large Egg Yolks
  • Pinch of Salt
 Directions:
  1. To make the pasta, mound your flour on a large pastry board, or the counter with the salt, and make a well in the center.
  2. Break the eggs, and yolks into this well, and start to scramble each egg with a fork as it is being added.
  3. Start to incorporate the eggs and flour by slowly bringing more flour in from the inside edges of the well.
  4. Continue mixing the flour with the eggs until they are no longer runny.
  5. Using your hands now, bring the outside edges in, forming a large mass on your board.
  6. Use only the amount of flour needed to form a soft ball.
  7. Begin to knead the ball of dough as you would bread, pushing it down with the heel of your hand.
  8. Continue kneading until the dough is smooth and satiny, for about 5 to 7 minutes.
  9. Wrap the prepared dough in plastic wrap, and let it sit for about 30 minutes.
  10. Use a pasta roller or roll by hand to make long sheets of pasta 1/8 inch thick



After rolling, cut into 12 inch long strips, and precook in boiling water for 30 seconds, then place in ice water.
Dry and set aside on clean kitchen towels.
