MEATLOAF STUFFED WITH EGGS

If you happen to browse through any December women's magazine or cookbook  you will see lot of this recipe. It's a favourite recipe for thanksgiving...and I am so intrigued with the recipe and made one for my daughter Tyca's 18th birthday dinner. Surprising they loved it so much. I brown some slice potatoes, onion and green peas as a side dish. Serve this with black pepper sauce and some baguette. Heavenly delicious and now I can see why this dish is so...so.....famous as a thanksgiving dinner. It's easy to make and you can use the leftover for the next morning breakfast sandwich.

INGREDIENTS
2 pounds ground beef
2 eggs
1 cup bread crumbs (up to 1 1/2 cups)
1 cup grated Parmesan
1 tablespoon BBQ seasoning
1 tablespoon black pepper
2 tablespoons fresh chopped
arsley leaves
2 cloves garlic, minced or pressed
1 onion, diced
1/2 cup ketchup
1/4 cup Worcestershire sauce
1 cup milk

Stuff Eggs
3-5 hardboiled eggs

PREPARATIONS

Preheat oven to 350 degrees F.

In a large mixing bowl, combine ground beef, eggs, breadcrumbs, Parmesan cheese, BBQ Sauce, garlic, onion, ketchup, Worcestershire.

Mix well, gradually adding the milk (if it seems too moist, add bread crumbs until it is a consistency that will form a loaf without flattening.

Flatten the meatloaf on a plastic. Arrange hard boiled eggs at the centre. Fold left and right side of eggs. Shape loaf oblong.

Spray a large baking or roasting pan with a non-stick spray and place the roll the meatloaf in.

Brush top with ketchup. Bake for 35 to 45 minutes or until the meat thermometer registers 160 degrees F.

Let rest 15 minutes, then cut and serve. Gravy is optional. - I used Black Pepper sauce

Look's like anak-anak suka...keesokanya dicari lagi..dibuatnya sandwich jadikan sarapan pagi.  Resipinya mudah aje..macam kita buat bergedil daging cuma meatloaf ini dibakar.
