SIMPLE SUNDAY BREAKFAST - CROSTINI EGG CHEESE AND CRANBERRY PANCAKE



My simple breakfast today...light and simple since there's only three of us at home I made Egg Cheese Crostini and Cranberry Pancake. Some context on Crostini to those may be confused to differentiate between crostini and bruschetta. Here's something exerpted from Wikipedia and net :-

Crostini (meaning "little toasts" in Italian) is an Italian appetizer consisting of small slices of grilled or toasted bread and toppings. The toppings may include a variety of different cheeses, meats, and vegetables, or may be presented more simply with a brush of olive oil and herbs or a sauce. Crostini is typically made using French or Italian baguettes and is often served with wine.

Along with bruschetta, crostini is thought to originate in medieval times when it was typical for Italian peasants to eat their meals on slices of bread instead of using ceramics. In Italian, the word crostini means “little toasts,” which is an accurate description of this food. Crostini are made by thinly slicing bread, typically plain white bread, and toasting or grilling it so that it becomes crispy. The slices can be drizzled with olive oil and salt and then served plain, or they can be dressed with an assortment of toppings and used as appetizers or garnishes with foods such as soups. Crostini are very easy to make at home.

They are also often used for the bases of appetizers, as in the case of crostini grilled with heirloom tomatoes and mozzarella cheese, for example. Sometimes, this food is served as a side dish with foods such as steak tartare.


The charm of a great crostino lies with the crunch. Without the contrast between the soft, savory topping and the golden, olive oil-slicked toast, crostini would be about as festive as… tea sandwiches, which is to say, not so much. But a platter of crisp crostini topped with cold cured meats and fish, soft cheeses, marinated vegetables, or succulent fruit is one of the most compelling ways to eat.

You can, of course, use them to whet appetites for more food to come, but why not let them make up the meal themselves? Serve them with your favorite. This is my favourite's eggs and cheese.




Makes 8 crostini

4 (3/4-inch thick) pieces of crusty country bread, halved 
Extra-virgin olive oil for brushing 
4 large eggs 
2 tablespoons plus 2 teaspoons extra-virgin olive oil 
2 teaspoons fresh lemon juice 
Cream Cheese, for spreading 
Slice cucumber
Slice tomatoes 
Freshly ground black pepper, for sprinkling

1. Make scramble eggs and set aside. Allow the eggs to cool while you work on preparing the rest of the ingredients.

2. Preheat a broiler or grill over high heat. Brush one side of the bread with the olive oil. Place bread slices on a baking sheet and toast the bread on one side until lightly browned and crisp, about 1 minute. Transfer to a wire rack and allow toast to cool.

3. When the eggs are at room temperature,gently toss them with the cream cheese and lemon juice. Layer the cucumer and fresh tomatoes over toast slices and place the egg mixture on top. Finish with freshly ground black pepper.
