FLYING FISH / IKAN TERBANG




Ikan Terbang literally means Flying Fish. This is another Sundanese signature that I tried to imitate but I failed. You really need to have a sharp knife to cut both size of the fish so that it resemble the wings of the fish. I bought two "talapia" did my first try but the whole fish mashed up, so the second fish I just left it as it is. Soaked the fish with garlic for a few minutes and deep fry.

This fried talapia serves best "Sambal Kicap" soy sauce condiment. If you are good in "operating" the fish the way it was served in the restuarant then you will definitely have a nice crispy fish. So...so..nice with hot steamed rice.

INGREDIENTS
1 talapia / 1 ekor ikan talapia
Sufficient water / Air secukupnya
5 cloves garlic / 5 ulas bawang putih
1 tsp salts v/ 1 sdt garam
Sufficient oil for deep frying./ Minyak untuk menggoreng

PREPARATIONS
Soaked fish with garlic and salts for a few minutes / Rendam ikan dengan bawang putih dan garam selama beberapa minit.

Slice the top of fish, both side right and left, pull curved the centre bone / Kelar ikan disebelah kiri dan kanan, tarik bahagian tengah ikan dengan menggunakan tali supaya melengkung.

Heat up oil and deep fry the fish till done / Panaskan minyak da goreng ikan sehingga masak.

Remove and serve with sambal / Angkat dan hidang bersama sambal kicap.

SAMBAL KICAP
1/2 cup dark soy sauce / 1/2 cawan kicap pekat
1 onion thinly slice / 1 biji bawang besar dihiris nipis
1 tomato thinly slice / 1 biji tomato dihiris hipis
7 bird's eyes chilies thinly slice / 7 biji cili padi dihiris nipis
3 tbsp lime juice / 3 sdb jus limau

Combine all ingredients / Satukan semua bahan

Ikan terbang yang tidak boleh terbang. Itulah terjadi kepada experiment saya membuat talapia goreng ala Sunda. Gara-gara tidak pandai mengkelar ikan menyerupai sayap projek saya gagal. Ikan ini sebenarnya kalau kena gaya menyediakanya cukup ranggup macam makan keropok ...cukup sedap lebih..lebih lagi kena dengan sambal kicap.  masih tidak putus asa, saya akan terus mecuba sehingga ikan saya benar-benar boleh terbang.
