ASSAM PEDAS DAGING TETEL / HOT SOUR BEEF SOUP



Assam Pedas literally means hot and sour soup. Popular among the southern Malaysian, ie Johor and Malacca. This soup is fiery hot ...but still you can slurp the soup like nobody business. This soup provides a pungent and zesty feast of flavour with every slurp. What makes this soup recipe special is the uniquely combination of the herbs and tamarind juice. These combinations marry beautifully with the chili paste and tamarind juice.

Perfect with hot steamed rice.


Ingredients
1 kg chunk beef / 1 kg daging tetel 
1bunga kantan (torch ginger), sliced or quartered / 1 kuntum bunga kantan
5 stalks daun kesum (polygunom leaves) / 5 tangkai daun kesum
3 kaffir leaves / 3 helai daun limau purut.
1 lemongrass - crushed / 1 batang serai dititik
3 potato - quartered / 3 biji kentang dibelah 4
3-4 cups water (you can use beef stock or broth) / 3-4 cups beef stock

ChiliePaste
35 dried chili deseed, soaked or boiled/ 35 tangkai cili kering direndam
10-15 shallots (or 2 large red onion) / 10-15 bawang merah atau 2 biji bawang besar
5 cloves garlic / 5 ulas bawang putih
1 1/2 inch ginger / 1 1/2 " halia
1 1/2 inch fresh turmeric / 1 1/2 " kunyit hidup
1 teaspoon belacan (Malay dried shrimp paste, the maggie belacan granules packet is equally good) / 1 sdt belacan
2 tbsp tamarind paste, add with water to dilute / 2 sdb air asam jawa
1/2 cup cooking oil / 1/2 cawan minyak masak

Method

Clean the beef and tenderize with pressure cooker till tender / Bersihkan daging dan rebus dengan pressure cooker sehingga empuk

Blend dried chillies, fresh chillies, shallots, ginger, garlic and belacan with a bit of water to form a paste./ Blend semua bahan Chilie Paste sehingga halus

Heat oil, fry the assam pedas paste on a slow medium fire until fragrant. Add lemongrass . Add potato and stock from the cooked beef. Add tamarind paste./ Panaskan minyak dan tumis bahan giling. Masukkan serai dan tumis sehingga naik minyak. Masukkan air rebusan daging dan kentang dan masak sehingga kentang empuk. Tambah air jika perlu. Masukkan air asam jawa.

Add water, leave to boil. Should be enough to cover the beef./ Tambah air jika perlu

Add beef, torch ginger and daun kesum. Reduce heat. cover and cook until beef and potato are tender. / Masukkan daging, bunga kantan, daun limau purut dan daun kesum. Perlahankan api dan masak sehingga daging dan ubi benar-benar empuk dan kuah sehingga naik minyak.


Adjust salts to taste and ready to serve with hot with rice. / Adjust garam secukup rasa dan siap dihidang.

Daging tetel dari projek daging korban baru ini saya buat assam pedas.  Ini memang kesukaan saya kena pula dengannasi panas dan ikan asin...memang menyelerakan. Resipi ini paling sedap kalau dapat ekor lemut dan masak dengan pressure cooker sehingga empuk. Kena gaya hirup macam hirup air kelapa sejuka. Cukup mantap.
