ARABIC COOKIES / BISKUT ARAB

This is a hit every time Raya. It was named Arabic Cookies or in bahasa Biskut Arab, but don't ask me how it hot its name.  I can only figure out the usage of ghee in the biskut....yeah the middle east foods were much associated with ghee.. may be that's how this cookie got it's name.

There are two version of this cookie, the first is something very soft and melt-in-the-mouth type and the second is something soft and crunchy. The different between both was the addition of fine sugar in the dough. This recipe was the soft melt-in-the mouth type.  It's easy to prepare this cookie. Just combine all the ingredients roll into small balls bake and roll again in fine sugar. An evergreen cookie that had been around for 3-4 generations. Try this!


INGREDIENTS

250 g flour/ 250 g tepung gandum
125 g ghee / 125 gm minyak sapi
Pinch of salts / secubit garam
Sufficient fine sugar for coating/Gula halus secukupnya untuk digolekkan

PREPARATIONS

1.  Combine and mix all ingredients marked * till form a fine dough /Gaulkan semua bahan* sehingga sebati.


2.    Make into a small balls. / Bulatkan sebesar guli.
3.    Bake at 180C for 20-25 minits/ Bakar dalam 180′C selama 20-25 minit.
4.    Leave to cool for a while and roll over the fine sugar. Place in paper cups – Optional /Bila dah sejuk taburkan gula halus. Masukkan dalam kertas cawan – jika suka

Ya habibi....Ya Mualana....inilah biskut yang sampai sekarang masih kekal, rasanya udah masuk 3 - 4 generasi....Resipi di atas adalah versi yang lembut dan gebus yang memerlukan perhatian lebih semasa memasukkan ke dalam balang kuih...terlalu lembut. Enak dan lemak....aroma dan rasa banyak datang dari ghee...resipi yang cukup mudah menyediakanya, campurkan semua bahan, bentukkan sebesar guli, bakar dan golekkan atas gula halus, malah sukatanya ikut basah tepung sehingga boleh dibentuk.
