Good Morning Malaysia and Asalamualaikum to all !!!!. Since there are only three of us at home,
I 'm not enthusiatic to cook breakfast, but then it was not fair to my other children especially Myraz who loves to pack food to school. So I still have to prepare breakfast but this time around in a small portion to cater for three. Today I made Fried Egg Noodles aka Mee Goreng.
There are a few variations of Fried Egg Noodles, the Chinese style, The Mamak Style, The Malay style etc...... However for today breakfast I made Mee Goreng the Malay Style, using chili paste, other ingredients used were more or less the same as other mee. Just squeeze some lime before eating. It will be great.
Ingredients:
2 cups fresh Chinese egg noodles
2 Tbsp chili paste
1 tsp dark soy sauce
1 tsp sugar
1/4 tsp salt
3 Tbsp oyster sauce
3 Tbsp ketchup
2 Tbsp vegetable or canola oil
2 eggs - boiled
1 onion thinly sliced
1 tsp minced garlic
1 cup mung bean sprouts, rinsed
1/2 cup chinese chives cut 1" length
250 gm shrimp, peeled and deveined
250 gm boneless chicken breast, cut into 1/2-inch cubes (or leftover shredded cooked chicken)
1/4 tsp white pepper
2 fried tofu - sliced
1 red chili - thinly slice
2 Tbsp scallions, sliced
2 Tbsp fried shallots
PREPARATIONS
- Heat up oil, saute sliced onions till soft and brown. Add in chili and garlic fry for a few minutes. Stir fry continuously until chili well blended with onions.Add some water if necessary.
- Add shrimps and chicken.
- Add dark soy, sugar, 1/4 tsp salt, oyster sauce, salts and ketchup. Stir to combine.
- Then add the, noodles, bean sprouts, chives, and 3/4 cup water. Stir-fry continuously until noodles are cooked, 3-5 minutes (depending on the heat of your wok), making sure to also cook the chicken and shrimp.
- Keep stirring until well combined. The noodles should begin to get a bit drier (no liquid left in the bottom of the wok). Garnish with scallions, tofu, red chillies and fried shallots.
Salam dan SELAMAT PAGI SEMUA....Memandangkan ahli rumah sudah semakin menurun, sudah tinggal kami tiga beranak sahaja, saya dah jadi malas nak ke dapur. Kegairahan nak memasak tu dah kureng. Tapi sekali fikir pula tidak adillah begitu kerana anak saya yang dua orang tu tidak sepatut merasa kekurangan jadi kenalah saya teruskan jadual harian seperti biasa, lebih-lebih lagi Myraz selalu akan membawa bekal ke sekolah. So hari ini saya buat mee goreng aje. Masak sudah tidak banyak macam dulu, ngam-ngam untuk tiga beranak. mee goreng ini saya goreng biasa aje, mee goreng cara Melayu, pakai cili.
