Bitterballan!!! being it beef, chicken, tuna, sardine or even cheese it's always a favorite to my children. I used to make it a big quantity and frozen it. This morning we have this as our breakfast. This deep-fried, crispy, bite-size ball of meaty gravy is to be eaten with a good, savory mustard. The children love it with chili sauce, so I prepared some chilie sauce and mango-cucumber salsa. Really tasty!!!!
INGREDIENTS
For The Skin
2 1/2 glass flour / 2 1/2 glass tepung
2 glass water / 2 glas air
1 glass fresh milk / 1 glas susu segar
4 tablespoons butter or margarine
1/2 chicken buillon / 1/4 kube ayam
1 tsp pepper / 1 sdt serbuk lada sulah
pinch of salts / secubit garam
2 eggs beaten /2 biji telur dipukul
2-3 cups breadcrumbs / 2-3 cawan serbuk roti
sufficient oil for deep frying / minyak secukupnya untuk menggoreng
For the Fillings
200 g minced beef/ 200 g daging kisar
2 potatoes cut into cubes / 2biji kentang dipotong dadu
1 carrot shredded / 1 lobak merah diparut halus
2 stalk green onion chopped / 2 tangaki daun bawang dicincang halus
3 cloves garlic / 3 ulas bawang putih
7 shallots / 7 biji bawang merah
1" ginger / 1" halia
1 onion chopped / 1 biji bawang besar dincincang
2 tbsp oil / 2 sdb minyak masak
2 tbsp kurma powder / 2 sdb serbuk kurma
salts and pepper to taste
SKIN PREPARATIONS
For the Fillings
200 g minced beef/ 200 g daging kisar
2 potatoes cut into cubes / 2biji kentang dipotong dadu
1 carrot shredded / 1 lobak merah diparut halus
2 stalk green onion chopped / 2 tangaki daun bawang dicincang halus
3 cloves garlic / 3 ulas bawang putih
7 shallots / 7 biji bawang merah
1" ginger / 1" halia
1 onion chopped / 1 biji bawang besar dincincang
2 tbsp oil / 2 sdb minyak masak
2 tbsp kurma powder / 2 sdb serbuk kurma
salts and pepper to taste
- Pound shallots, garlic and ginger to form fine paste / tumbuk bawang merah, bawang putih dan halia sehingga halus.
- Heat up oil and saute chopped onions till soft and fragrant / Panaskan minyak dan tumis bawang besar shingga layu dan wangi.
- Add in kurma powder mix with pounded ingredients / Masukkan rempah kurma dan bahan tumbuk.
- Fry till fragrant and in potato, minced beed and 1/2 cup water / Tumis sehingga naik baunya dan masukkan kentang, daging kisar dan setengah cawan air. masak sehingga kentang empuk
- Add in carrots, salts and pepper to taste / Masukkan lobak merah, garam dan lada secukup rasa.
- Finally add in chopped spring onion, toss well and cool before use / Akhir sekalai masukkan daun bawang, gaul rata padamkan api dan sejukkan sebelum digunakan.
SKIN PREPARATIONS
Boil water, add in chicken bouillon, salts. Leave to boil. Then add in milk, simmer for a while then add butter. Finally add in flour. Stir constantly until flour thickens and shofted away from pans. Removed and leave too cool. Once cool roll into balls, flatten and fill in the fillings. Sealed and roll back into balls. Roll balls into eggs and then into breadcrumbs. Deep fried until golden brown. Drained and ready to serve./Masak air sehingga mendidih. Masukan pati ayam, garam, lada sulah dan mentega, renahkan sehingga mendidih. Masukkan tepung dan kacau sehingga tepung masak dan tidak melekat pada kuali. Angkat dan sejukkan sebentar. Bila sudah sejuk bentukan seperti bola, leperkan isikan inti, lekatkan dan bentukkan semula sepeti bola. Golekkan ke atas serbuk rotu. Ulangi proses sehingga habis, Goreng secara deep fried sehinggakekuningan dan masak. Angkat, toskan dan sedia dihidang.
- Heat 1 tablespoon of the butter in a large skillet over moderate heat and cook the meat, carrots, and onions until the meat is browned and the carrots are tender. Drain the meat in a colander, then place in a mixing bowl.
- Add the salt, pepper, nutmeg, lemon juice, and parsley and stir to combine. Set the meat mixture aside.
Ini memang resipi kegemaran se isi keluarga. Biasanya saya akan buat banyak-banyak dan frozen dalam fridge. Goreng bila perlu. Selalunya anak-anak suka sajian ini sebagai sarapan pagi. Mereka gemar membawa ke sekolah. Untuk resipi anda boleh menggunakan daging, ayam, tuna, sardine mahupun cheese. Sedap dimakan panas-panas dan dicicah bersama sos cili.
