SWEET POTATO FLAN/ FLAN KELEDEK


This is another interesting dessert that I got from Chef Wan cookbook- Juadah Manisan Istimewa. Sweet Potato Flan. Flan is a traditional Mexican dessert and there are many version of flan. This flan is fabulous and easy to make. It is make of condensed milk, fresh milk cream and mashed sweet potato.The smooth, soothing caramel custard makes the perfect finish to any hearty, spicy, intensely flavored main course. This version is easy to make and works beautifully all by itself or with a bowl of fresh strawberries to spoon alongside. If you 've never made flan before now is the time to try this recipe.


INGREDIENTS
1 cup sugar / 1 cawan gula
1/4 cup water / 1/4 cawan air
8 eggs / 8 biji telur
2 eggs yolk / 2 biji kuning telur
400 gm condensed milk / 400 gm susu pekat manis
1 cup fresh milk / 1 cawan susu segar
1 cup thick cream / 1 cawan krim pekat
1tbsp vanilla essence / 1 sdb vanila
1 tsp nutmeg powder / 1 sdt serbuk buah pala
1/2 sdt allspice powder / 1/2 sdt serbuk allspice
600 g sweet potato-boiled and mashed / 600 g keledek yang direbus dan dilecek.
  1. Preheat oven to 350 degrees. Have ready an ungreased 9-inch round or square 1½- to 2-quart baking dish./ Panaskan oven kepada 350 darjah. Sediakan dulang pembakar berukuran 9" seelok-eloknya bulat
  2. Cook cup of the sugar over medium heat in a heavy medium-sized saucepan, stirring almost constantly with a long-handled wooden spoon, until it is melted and turns first golden and then very dark brown, about 5 minutes. (Use extreme caution! Cooked sugar is very hot and can burn the skin if it spatters.) Immediately pour the hot caramel syrup into the baking dish and swirl the pan until it coats the bottom. The caramel will harden at this point and melt again later as the flan bakes./ Masak gula pada api sederhana dalam periuk berat kacau selalu sehingga gula cair and kekuningan- lebih kurang 5 minit. Cepat-cepat tuangkan karamel ini ke dalam acuan dan putar acuan sehingga gula menutupi semua ruang.
  3. Gently but thoroughly whisk together the eggs, egg yolks in a mixing bowl until smooth. Gradually whisk in the ingredients and ending with mashed potato.. Pour the custard mixture into the prepared dish. Set the dish in a larger baking pan and fill the larger pan with hot water to come halfway up the sides of the baking dish./ Pukul telur hingga gebu, kemudian masukkan bahan-bahan lain diakhiri dengan keledek. Tuangkan adunan ke dalam acuan. Masukkan acuan ke dalam acuan yang lebih besar berisi air panas.
  4. Bake until a knife inserted two-thirds of the way to the center comes out clean, 35 to 45 minutes. The center should still be slightly soft, as the flan will finish cooking after it is removed from the oven. Cool in the water bath, then remove baking dish from water bath and refrigerate for at least 1 hour or up to 8 hours./ Bakar sehingga masak. Cara untuk mengetahui flan sudah masak ialah dengan menyucuk hujung pisau ditengah-tengah flan. Jika pisau keluar bersih flan sudah masak.
  5. Before serving, run a sharp knife around the edge of the flan to release it. Place a large rimmed serving plate over the baking dish and, using both hands, invert both dishes so that the flan and the liquid sauce unmold onto the platter. Refrigerate again until serving time.

Flan adalah pencuci mulut dari Mexico yang selalu dihidang dipenghujung setiap sajian, di mana-mana restuarant di Mexico. Cukup terkenal di seluruh dunia dan boleh dibuat dengan beberapa variasi. Biasanya flan ini dibuat kosong aje tetapi resipi Chef Wan ini menggunakan keledek. Ini menambahkan kelemakan dan kemanisan pada flan ini. Mudah dibuat sesuai dihidangkan bersama-sama buah-buahan seperti strawberry, cherry mahupun blueberry. Kepada yang belum pernah mencuba, bolehla cubanya sekarang. Dengan resipi yang sama juga kalau kita tidak berminat untuk membakar, kita boleh juga mengukusnya.
