ASSAM PEDAS AYAM /CHICKEN IN HOT SOUR GRAVY


We normally cooked Assam Pedas with fish and seldom use chicken or beef in this recipe. However both beef and chicken made equally good Assam Pedas. I made chicken Assam Pedas several times and seem to get good response from my children, some even slurp asam pedas like slurping soup regardless how hot this dish was. For chicken assam pedas it is best to add in potato and kaffir leave. Other ingredients for fish assam pedas remains. So here's how I made my Chicken Assam Pedas.
  • 1 Kg chicken cut into bite pieces
  • 4 potatoes quarterd
  • 2 tomato (cut into wedges)
  • 5 kaffir leave
  • 2 lemongrass crushed
  • 1/2 cup of tamarind (put into a cup of warm water an squeeze the juice)
  • 1/2 cup of cooking oil (not olive oil)
  • 1 tbsp of white sugar
  • Salt to taste
Asam Pedas Paste:
  • 30 dried chilies- soaked
  • 5 clove garlic
  • 2" tumeric root
  • 2 onions
  • 1" of belacan (prawn paste)
In a mortar, pound the paste or grind them in a food processor. Set aside.

Preparation for Asam Pedas :
  • Heat oil and fry the blended paste with lemon grass until fragrant.
  • Add in kaffir leave and stir for 1 minute until fragrant.
  • Add potato and chicken, tamarind juice and two cups of water  and bring to boil .
  • Cooked until both potato and chicken tender..
  • Add  salt, and palm sugar/sugar.
  • Simmer on low heat for 3-5 minutes or until the chicken and potato are done.
  • Finally add in the fresh tomatoes.
  • Serve Asam Pedas hot with steamed rice or bread.

Kebanyakan kita memang suka memasak Asam Pedas dengan Ikan, tak kira ikan apa biasanya yang favorite, tenggiri,merah, jenahak, terubuk, parang, pari, kembung dan lain-lian. Jarang kira menggunakan ayam atau daging sebagai bahan utama, saya tidak tahu mengapa, tetapi sebenarnya asam pedas ayam atau pun daging ini tidak kurang hebatnya, Saya memang suka asam pedas ayam, lebih gemar ayam dipotong kecil-kecil seperti membuat sup, sedap dikecep-kecep tulangnya. Biasanya untuk asam pedas ayam saya kan masukan sedikit ubi kentang dan untuk haruman saya tukarkan daun kesum dengan daun limau. Serai dititik-titik macam biasa.
