Char kway teow, literally "stir-fried ricecake strips", is a popular noodle dish in Malaysia, indonesia, Brunei and Singapore. The dish was (and still is in some places in Malaysia and Singapore) typically prepared at hawker stalls especially in Penang, Malaysia.
It is made from Flat rice noodles of approximately 1 cm or (in the north of Malaysia) about 0.5 cm in width, stir-fried over very high heat with light and dark soya sauce, chillies , a small quantity of belachan, whole prawns, deshelled cockles, bean sprout and chopped Chinese Chives. The dish may commonly be stir-fried with egg, slices of Chinese Sausage and fishcake.
That's a brief explanation by Wikipedia for those new to this dish. I had shared with you on the wet version of Penang Char Kuey Teaw and today we are going to make the dried version. It is important to note that the best Char Kuey Teaw lies in the sauce/seasoning. Make sure you get the right sauce for your kuey teaw. To have much...much...impact on your kuey teaw fried it individually, I mean fried it per serving. Here's what you need,
INGREDIENTS
1 packet kuey teaw / 1 paket kuey teaw
1 cup shrimps shelled / 1 cawan udang hidup dibuang kulit
2 cups bean sprouts / 2 cawan taugeh
5 stalks Chinese Chives - cut into 2" length / 5 tangkai kucai potong memanjang 2"
2 fish cakes sliced thinly / 2 fish cake hiris nipis-nipis
10 pcs fish balls halved / 10 biji bebola ikan belah dua
1/2 cup shelled cockles / 1/2 cawan kerang rebus dibuang kulitnya
3 tbsp chili pes / 3 sdb pes cili
3 tbsp garlic paste / 3 sdb pes bawang putih
5 tbsp cooking oil / 5 sdb minyak masak
3 eggs / 3 eggs
Seasoning
3 tbsp ligh soya sauce/ 3 sdb kicap cair
1 tbsp dark soya sauce / 1 sdb kicap pekat
1 tbsp fish sauce / 1 sdb sos ikan
- Mix soy sauces and water together. Set aside./ Campurkan semua bahan perasa dan letak sebelah.
- Place the remaining ingredients mise-en-place, and roughly divide each ingredient into 3 portions./Bahagikan semua bahan kepada 3 bahagian
- Cooking the dish – 1 serving at a time:/Goreng satu persatu
- Heat a cast iron pan or a wok on high heat/Panaskan kuali
- Add 1 tablespoon oil, add 1 portion (1/3rd of the ingredient) of shrimps, fish balls and fish cake and sauté 1 minute till fragrant. Push to the side of the wok./Masukkan 1 sdb minyak, tumis fish balls, fish cake dan udang dalam 1 minit.
- Add 1 teaspoon of garlic and a portion of cili paste saute till fragrant. Push to the side of the wok./Masukkan bawang putih dan cili pes. Goreng sehingga naik baunya.
- Add 1 portion of noodles. Drizzle 2 tablespoons soy sauce mix over the noodles, toss on high heat till noodles are well coated. Push to the side of the wok./Masukkan 1 bahagian kuew teaw dan 2 sdb sos perasa tadi. kacau rata sehingga bersalut semua kuey teaw.
- Make a well in the middle, add 1/2 tablespoon of oil. Break in an egg, drizzle in a teaspoon of soy sauce mix, let it cook like a sunny side up, until eggs are whit but still slightly runny, then scramble the eggs into the noodle mixture./ Buang lubang ditengah-tenagh kuey teaw masukkan 1/2 sdb minyak. Pecahkan telur, percikkan sedikit sos perasa itu lagi, biarkan sebentar kemudian pecah-pecahkan telur dan gaulkan pecahan telur ini dengan kueh teaw sehingga rata.
- Add 1 portion each of bean spouts ,cockles and chives. Toss to mix./Akhir sekali masukkan taugeh, kerang dan kucai. gaul rata dan jangan terlalu lama.
- Serve immediately./Hidang serta merta
- Repeat for each serving./Ulangi proses sehingga habis.

Kuey Teaw ini memang top di Pulau Pinang, tidak sah kalau sudah berkunjung ke Pulau Pinang tanpa mencuba Kuey Teaw ini. Sedapnya kuey teaw banyak bergantung kepada sosnya. Oleh itu kalau membuat kuey teaw goreng seperti ini pastikan anda menggunakan sos yang bersesuain.
Dalam resipi ini saya menggunakan bebola ikan, fish kek, udang hidup dan kerang. Untuk memastikan keuy teaw kekal sedap pastikan ianya digoreng satu persatu.
