If you are in Phuket look for this. It's a street snack made of sweet potato and glutinous rice. If you are Malaysia, you can find this in Petaling Street. It's crunchy outside and soft inside. A bit chewy, and could be addicted once started. For this recipe I used three type of sweet potato, the yellow, the orange and the purple. Perfect for tea and easy to make.
FRIED SWEET POTATO BALLS
INGREDIENTS
INGREDIENTS
450 g Sweet Potato Flesh - boiled and mashed / 450 gm keledek, rebus dan lecek
2 cups Glutinous Rice Flour / 2 cawan tepung pulut
1/4 cup Corn Flour / 1/4 cawan tepung jagung
1 cup Sugar / 1 cawan gula
1 cup Grated Coconut / 1 cawan kelapa parut
¼ Salt / 1/4 sdt garam
Oil for deep-frying / minyak untuk menggoreng
PREPARATION
2 cups Glutinous Rice Flour / 2 cawan tepung pulut
1/4 cup Corn Flour / 1/4 cawan tepung jagung
1 cup Sugar / 1 cawan gula
1 cup Grated Coconut / 1 cawan kelapa parut
¼ Salt / 1/4 sdt garam
Oil for deep-frying / minyak untuk menggoreng
PREPARATION
- Place the sweet potatoes in a large bowl and add in the glutinous rice flour, corn flour, sugar, grated coconut, and salt. Mix with your hand to get soft dough. Knead lightly to form a smooth dough./ Satukan keledek, tepung, gula, kelapa parut dalam satu bekas. Gaul dan uli rata.
- Pinch a small piece of dough (about 15 g each) roll them in your palm to form a smooth ball./ Bentukkan bulat seperti bebola kecil dengan menggunakan tangan.
- Heat the oil in a deep fryer or heavy pan over low to moderate heat. Put in a cube of potato – when potato is nicely colored, the oil is hot enough to fry the sweet potato balls. Fry until golden, remove and drain on a paper towel. Serve immediately.
Sesuai dijadikan sajian petang
