3 - HOT AND SPICY SIMPLE DAILY DISHES - DRIED CURRY CRABS , FISH ASSAM PEDAS AND BANAN YELLOW CREAM CURRY

Curry, Assam Pedas and Masak Lemak, are always a preferences when deciding what to cook for lunch or dinner. I love all three, and used to rotate the dishes with either chicken, beef or fish. These are my family favorite, smoky and hot with hint of spiciness. Every time I asked the children what to cook for lunch or dinner definitely these 3 dishes will be their selections. I believe these are not only my family favorite but also Malaysia favorites. So let's start with my Dried Curry Crabs.


DRIED CURRY CRABS
My family Top 3 crabs recipes are:
  • Curry - wet or dried
  • Masak Lemak with pineapple
  • Fried Crab with Taucho
And of course the No: 1 on the list is Dried Curry Crabs Nasi Kandar Style. Del
INGREDIENTS

1 kg Crabs, cleaned, cut into 2 pieces for each crab, discard the hard shell and reserve the tomalley / 1 kg ketam belah dua

3 sprigs curry leaves / 3 tangkai daun kari
1 Cinnamon Stick, about 3 inches / 1 kulit kayu manis
3 Whole Star Anise / 3 kuntum bunga lawang
1 cup Coconut Milk / 1 cawan santan
1 cup stock or water / 1 cawan air atau stok
2 Fresh Green Chilies, halved and seeded / 2 biji cili hijau belah dua
½ of a Lime, juiced / 1/2 air limau atau asam jawa
Salt to taste / garam secukup rasa 
1 laddle Vegetable Oil / 1 senduk minyak masak
To be blend
5 cloves Garlic / 5 ulas bawang putih
1 "Ginger  / 1" halia
1 Onion, chopped / 1 biji bawang besar
2 packet Fish Curry Powder / 2 paket rempah kari ikan
10 dried chilies soaked / 10 biji cili kering direndam dahulu

Blend all ingredient and put aside / Blend semua bahan giling dan letak sebelah.
PREPARATION
In a large wok, heat the oil on high heat. Fry the (3 sprigs) curry leaves until crispy. Set aside for garnish./ Panaskan minyak dan goreng dua tangkai daun kari, angkat dan letak sebelah.

Using the same wok over medium to high heat, add the cinnamon stick and star anise. Cook until fragrant and mix in the blended ingredients and the remainder curry leaves. Cook until light brown in color.

/ Dengan menggunakan minyak yang sama masukkan kulit kayu manis , bunga lawang dan daun kari, Goreng sehingga naik baunya dan masukkan rempah giling tadi sehingga garing.

Mix in the coconut milk and bring the curry sauce to a boil and add in the crabs and the tomalley. Turn the heat on high and bring the sauce to a boil again. Then lower the heat to medium and continue to fry the crabs for about 10 minutes and toss in the green chilies. Season the crabs with lime juice and sea salt, if necessary. Continue to cook for another 5 minutes or until the sauce has thicken. Garnish the crabs with fried curry leaves and serve warm.

/ Masukkan air dan santan. Masukkan ketam dan masak hingga pekat. Masukkan garam dan air asam limau mengikut rasa. Masak hingga kuah agak kering dan angkat.

Kari, Assam Pedas dan Masak Lemak, adalah favorite dan selalu menjadi menu pilihan harian. Tak kiralah ayam, daging ataupun ikan, tukang masak di rumah akan rotate menu ini. Memang tidak dapat disangkal lagi, malah sajian ini adalah sajian kenegerian, Asam Pedas, Johor dan Melaka, Masak Lemak orang Nogori dan Kari favorite orang Utara, so macam mana pun sajian ini selalu menduduki tangga teratas sekali,


Untuk entry kali ini saya memilih ketiga-tiga sajian ini, dimulakan dengan kari Kering Ketam. Selalunya kalau memasak ketam ini saya sama ada memasak kari tak kiralah kering atau pun basah, masak lemak ketam nenas ataupun ketam goreng taucho. Tapi NO:1 favorite anak-anak ialah kari kering ini. Kalau masak biasanya 2 kg tak cukup, habis waktu makan tengah hari, tiada siaran ulangan. Memang sedap makan dengan nasi panas. Kari ini adalah ala-ala Nasi Kandar, pedas dan berempah. -SELAMAT MENJAMU SELERA.
