Stir Fried Bean Sprouts With Chive

The children were out for their week end outing, I still have to cook lunch cum dinner. I made it early so that I can continue my reading. So lunch for Saturday were Asam Rebus Ikan Tenggiri, Mushroom Omelette and Stir Fried Bean Sprouts. Simple and light

Asam Rebus Ikan Tenggiri - The Southern called it Asam Rebus, the Northern called it Asam Pedas. Basically it is the same, the only reason why the Southern people called it Asam Rebus coz it is another version of Asam Pedas but without sauteing with oil. A bit mild as compared to Asam Pedas, can even sip like soup.  So here how I made my Asam Rebus :-

ASAM REBUS IKAN TENGGIRI
4 slices tenggiri/ 4 keping ikan tenggiri
1 lemon grass - smashed/ 1 batang serai titik
1 bunga kantan cut into 2 / 1 kuntum bunga kantan belah dua
2 slice pineapple cut into 2"/ 2 belah nenas potong 2 inch
7 okra/ 7 bendi
3 stalk daun kesum/ 3 tangkai daun kesum
3 pcs asam keping/ 3 keping asam keping
1 jug water/ 1 jug air


For the paste/Bahan Untuk diblend
15 red chilies - soak/ 15 cili kering rendam
7 red chilies/ 7 biji cili merah
7 shallot / 7 ulas bawang merah
3 cloves garlic/ 3 ulas bawang putih
1" belachan/ 1" belachan
2"turmeric root/ 2" kunyit hidup

Blend all the ingredients and put aside.


For Sauteing/Bahan Tumis Darat
5 tbsp cooking oil / 5 sdb minyak masak
7 shallots/ 7 biji bawang merah
5 cloves garlic/ 5 ulas bawang putih
5 dried chilies cut cut 2"/ 5 biji cili kering potong 2"
METHOD
  1. In a pot put 1 jug of water. Add in the blended paste and bring to boil. Add in " asam keping", salt and sugar to taste. Also add in smashed lemongrass and "daun kesum". Add in fish and leave to simmer for 15-20 minutes. Add in "bunga kantan", slice pine apple and okra, leave to sim for another./ Dalam periuk masukkan 1 jug air, bahan blended, serai, asam keping,garam dan gula secukup rasa. Rebus bahan sehingga mendidih. Masukkan ikan, bunga kantan dan daun kesum. Rebuskan lagi 5 minit. Masukkan nenas dan bendi biar di atas api kecil sehingga bendi empuk.
  2. In another pan heat in 5 tbsp oil and fry slice shallot, garlice and dried chili till brown. Pour this fried ingredients together with the oil into the simmering asam rebus. Simmer for another 5 minutes and remove from heat. Ready to serve. / Di dalam kuali yang lain panaskan minyak dan buat tumis darat, goreng bawang putih,bawang merah dan cili kering kekuningan dan masukkan kedalam asam rebus yang mendidik. Biarkan 5 minit dan padamkan api. Sedia untuk dihidang.

Lauk ini sedap dimakan dengan nasi panas dan ikan perkasam. Kena pula dengan kerabu taugeh atau pucuk paku, memang tak bangun dari kerusi. Sedap dihirup, rasa masam-masam nenas, manis-manis ikan, memang enak la.
