SUP AYAM BEREMPAH/SPICY CHICKEN SOUP

The difficult part of being a home chef is not so much about the cooking part, its the menu that normally crack our head. To get the right combination between one dish to the other I consider a tough assignment. I remembered my mum used to grumbled every time she hold her market basket. The words that came out from her mouth "Nak masak apala hari ini" (what to cook today).You can have thousands of recipe but if you pick up the wrong combination that may jeopordise  one's appettide.

As for me, I normally leave this task to my children. They decide what they want for their lunch or dinner. 7 days a week, 5 days are the children choices, the balance 2 days are my choices. I believe that is fair, make everyone happy and make my life easier. Today is my number four Myra turns, this your lady love chicken and eggs. Her choices will be anything about chicken and eggs, Chicken soup, Curry Chicken, Kurma Chicken, Ayam Masak Kicap and Rendang Chicken. Today she wants Spicy Chicken Soup and Telor Belado.

So here goes our Lunch menu for today......

Baby Kailan With Oyster Sauce is my choice, I can't leave without vegetables. For the Chicken Soup I use "rempah soup Mak Siti" I love spices in her rempah, not too strong. Add potatoes, carrot and celery. Telor Berlado is popular Padang dish. You can find it in most Padang restuarant. I took Myra to Medan, Indonesia on our family trip, ever since then this dish became her favorite. Lucky its simple to prepare. Chicken Soup and Telor Berlado are a fantastic combination. Much better if you can add in Potatoe Bergedil, Perghhhhh........

SOUP AYAM BEREMPAH/ SPICY CHICKEN SOUP
INGREDIENTS
1/2 chicken cut small/ 1/2 ekor ayam potong kecil
5 potatoes cut into four/5 biji kentang belah empat
1 carrot - slice small/ 1 biji carrot potong kecil
1 celery - slice small/ 1 batang celery potong kecil
3 bowl chicken stock/3 mangkok stok ayam
1 cinnamon stick/ 1 batang kult kayu manis
5 cardamon/5 biji buah pelaga
2 star anise/ 2 kuntum bunga lawang
salts and peppers to taste/lada sulah dan garam secukup rasa
1/2 packet soup poweder/ 1/2 paket rempah sup mak Siti
Blend
5 cloves garlic/ 5 ulas bawang putih
2 onions/biji bawang besar
1 inch ginger/ 1 inch halia
METHOD
Blend onion, garlic and ginger. Mix with the soup powder. Mix with 1/2 cup water/ Blend bawang putih, bawang besar dan halia. Campurkan bersama dengan rempah sup. Campur dengan menggunakkan 1/2 cawan air.

Skin chicken and trim away any visible fat.Wash and place in a large stockpot with Add cold water.Bring to the boil, skimming away surface scum using a large flat ladle. Add in potatoes and reduce heat, cover and simmer for 20 minutes./Bersihkan ayam  dan buang lemak-lemak. Masukan ayam bersama stock ke dalam periuk. Masukan kentang dan renehkan selama 20 minit.

Add in the blended ingredients and continue simmering until chicken is soft. Add in pepper and salts to taste. /Kemudian masukan rempah sup yang dicampur dengan bahan giling tadi. Masukan kulit kayu manis, buah pelaga dan bunga lawang. Renehkan sehingga ayam dan kentang empuk.

Lastly add in carrot and celery. Simmer for another 10 minutes and off the heat. Akhir sekali masukan karat dan celery./ Renehkan lagi selama 10 minit.

Serves with spring onions and fried onion./Taburkan daun bawang dan sup semasa menghidang.

Sup ayam ini saya buat tidak menumis atau menggunakan minyak. Saya renehkan semua bahan. Lemak dari ayam akan mencantikkan lagi sup. Sedap juga dimakan dengan roti.. Soup ayam dengan telor berlado adalah gandingan yang hebat. Kalau rajin buat bergedil daging....perghhh... mak mertau lalu tak sedar..
