SUNDAY SPECIAL - TOMATO RICE, DALCA AYAM, AYAM MASAK MERAH AND EGG SALAD

Sunday lunch is always special. Normally Sunday my son and my eldest daughter will be back home from their college. I will definitely cook special dishes of their favorite. This time it was Tomato Rice, Dalca, Ayam Masak Merah and Egg Salad. This menu goes well with either acar timun, acar buah, papadom and sambal kelapa. I skipped all that knowing the children don't quite like it. Another dish that fit Nasi Tomato is Ayam/Daging Masak Hitam ala Nasi Kandar. May be on my future post I post this Penang Island famous recipe Daging Masak Hitam ala Nasi Kandar.

PATY'S KITCHEN TOMATO RICE

INGREDIENTS
1 kg Basmathi rice/ 1 kg beras Basmathi.
1 cup evaporated milk/ 1 cawan susu cair
5 cups water/ 5 cawan air
1 cup Heinz tomato/ 1 cawan tomato Heinz
1 small tin- 1/4 cup tomato puree/ 1 tin kecil lebih kurang 1/4 cawan puree
3 tbsp kurma power/ 3 sdb serbuk kurma
2 fresh tomato slice thinly/ 2 biji buah tomato hiris halus
1 fresh carrot slice thinly/ 1 carrot potong memanjang nipis-nipis
1 stalk coriander leave - chopped/ 1 tangkai daun ketumbar mayang halus
10 pcs mint leaf -chopped /10 helai daun pudina mayang halus
1 screwpine leaf knotted/ 1 helai daun pandan ikat
9 shallots/9 bawang merah
5 glove garlic/ 5 ulas bawang putih
1 inch ginger/ 1 inch halia
1 onion slice thinly/ 1 biji bawang besar mayang halus
1/2 cup ghee/ 1/2 cawan ghee
1 cinnamon stick/ 1 batang kulit kayu manis
3 anise star/ 3 bunga lawang
5 cardamon/ 5 buah pelaga
METHOD
  1. Measure the 1 kg rice using cup. The amount of water use should be equivalent to the amount of rice. If your rice is 5 cups then the water for cooking should also be 5. Wash and drain rice put aside/ Sukat beras dahulu. Jumlah air yang digunakkan mestilah sama dengan junlah beras. Jika sukatan beras 5 cawan, air pun kena 5 cawan baru nasi akan cantik. Basuh beras dan toskan.
  2. Pound garlic, shallot and ginger, mix well with kurma powder/ Tumbuk bawang merah,bawang putih dan halia, campur dengan rempah kurma dan letak sebelah.
  3. Heat up ghee, saute slice onion for 5 minutes then add in the kurma powder mixture and screwpine leaf, cinnamon, anise star and cardamon. Stir fry until fragrance. Add in water. Sim till boiled. Add milk, puree, tomato Heinz, salt to taste, coriendar leave, mint leaf, slice tomato and slice carrot. Sim another 5 minutes and add in rice. Lower the heat until rice cook. Ready to serve./ Panaskan minyak sapi. Tumis bawang besar dan daun pandan selama 5 minit, masukkan bancuhan rempah tadi dan rempah 3 sekawan dan terus tumis sehingga naik baunya. Masukkan air dan biar sehingga mendidih.  Masukkan susu, tomato Heinz, tomato puree, karot, daun pudina, daun ketumbar dan tomato buah yang dihiris tadi.Didihkan lagi lima minit, baru masukkan beras. Kecilkan api dan masak nasi seperti biasa sehingga masak.

Resipi yang saya muatkan ini agak mewah sedikit. Biasanya orang tidak meletak rempah dalam nasi. Bergantung kepada citarasa masing-masing, saya suka nasi tomato saya ada rasa rempah-rempah sedikit supaya ia boleh dimakan begitu sahaja. Lemak dan sedap.
