RISSOLES DAGING

Rissoles are breaded Indonesia Roll Snacks filled with shrimp, chicken or ground beef. A savory version of kuih dadar breaded and deep fried. It goes well with chilie sauce. 



INGREDIENTS

Filling: 

250 gm mince beef/ 250 gm daging kisar

1 onion, diced / 1 biji bawang merah dicincang
3 garlic cloves, crushed / 3 ulas bawang putih
3 potatoes diced/ 3 biji kentang dipotong dadu
1/2 ginger/ 1/2 inch halia.
1/2 cup mixed vegetables/ 1/2 cawan sayur campur 
1 tsp fennel powder/ 1 sdt serbuk jintan manis 
1 tsp cumin powder/ 1 sdt serbuk jintan putih
4 Tbsp extra oil / 4 sdb minyak
Salt and pepper to taste / garam dan lada secukup rasa

Marinate beef with cumin, fennel, garlic, ginger and garlic. Leave a while./ Perap daging dengan serbuk jintan manis, serbuk jintan putih, halia, bawang putih, lada sulah dan garam. Biarkan sebentar.

Heat 3 tablespoon oil in a big pan, saute the chopped onion, and stir it until fragrant. Add the marinated beef./ Panaskan minyak dan tumis bawang besar sehingga naik baunya. Masukkan daging yang telah diperap tadi.


Add the potatoes and 1/2 cup beef stock or water. Let them cooked until the potatoes tender. Add sugar, salt, pepper and mixed vegetables. Taste it. Add more ingredients to your taste. Cool down and put aside. / Masukkan ubi kentang, 1/2 cawan air dan biarkan masak sehingga kentang empuk. Masukkan garam, gula dan mixed vegetable. Rasa secukup rasa. Bila ubi dah empuk ketepikan dan sejukkan.

The Sheet 
1 cup all purpose flour / 1 cup all purpose flour
1 1/2 cup milk / 1 1/2cawan susu 
2 eggs/ 2 biji telor
2 Tbsp butter / 2 sdb mentega
Salt to taste / garam secukup rasa


Mix all the ingredients in a big bowl, the mix has to be a thin not too thick like a pancake mix, or else the sheets would be too thick and it's more difficult to fold and it's not too really tasty./ Campur semua bahan dan kacau rasa. Pastikan adunan tidak terlalu cair dan tidak terlalu pekat. Sebaik-baiknya tektur adunan sama dengan adunan membuat kuih dadar.


Take a pan for the pancake, smear it with oil, and make a sheet like a pancake sheets, and put it on the plate that you have already oil it, turn the sheets on and fill it right away with the filling. Don't wait until cold, it's the most efficient and the fastest way to work./ Leserkan kua;li dengan minyak dan dadarkan tepung seperti membuat kuih dadar. Angkat dan letakkan ke dalam pinggan. Masukkan inti dan gulung.

For breading and frying: 
2 to 3 eggs / 2- 3 biji telur
1 ½ cups fine breadcrumbs / 1 1/2 cawan serbuk roti

Beat 2 eggs in a mixing bowl. In another bowl put the finely ground breadcrumbs, crushing if necessary. Dip risolles into the egg, be sure to coat thoroughly. Then, place egg battered rissoles into the crushed bread crumbs again making sure to coat thoroughly. Fry in hot oil until golden brown and let drain on paper towels./ Pukul telor, celupkan rissoles ke dalam telur dan oleskan ke dalam serbuk roti. Buat sehingga habis semua dan goreng deep fry.

Rissoles sebenarnya sama seperti kuih dadar, dalam erti kata lain kuih dadar berlauk yang diolehkan dengan serbuk roti.  Intinya boleh diperlbagaikan, seperti inti udang, ayam mahupun daging. Sedap dimakan dengan sos cili.
