KUIH BAKUL WITH SWEET POTATO AND YAM


The kuih is sandwiched between slices of sweet potato and yam, then dipped into a batter just like banana fritters. I remembered those day my mum used to steam the kuih bakul and roll with grated coconut - just like kuih kosui, now that I knew that we can deep fried this kuih my preference changed to this deep fried recipe.


Not many know about this kuih, my first encounter was, when my friend  bought the kuih from one of the hawkers selling banana fritters near Tanjung Bungah Penang. Since then every time I'm in Penang I will make an attempt to buy this kuih, and every time Chinese Year I will make sure I collect some to make this delicious fritters. For those who wish to try all you need are sweet potatoe and yam. Slice them into rectangular. Also cut the kuih bakul rectangular and sandwiched the kuih bakul with the potatoe and the yam. Dip into the banana fritter batter and deep fry it. You can also use ready fritters mixture like "Adabi".


Batter:

1 cup rice flour/ 1 cawan tepung beras

½ teaspoon  air kapur/ 1/2 sdt air kapur

pinch of salt/ garam secukup rasa

about ½ cup water (may need more or less)/ 12 cawan air - tambah jika perlu

Oil for frying/Minyak untuk menggoreng.

Mix altogether to form a consistency batter. Coat kuih slices with batter and deep fry till golden , Drain on kitchen towel. Serve hot./ Campur semua bahan dan pastikan adunan tidak terlalu pekat dan tidak terlalu cair. Adunan mesti berupaya untuk menyaluti kuih.

Sebenarnya tidak ramai yang mengetahui resipi, tetapi kepada yang meminati kuih bakul selain daripada mengukus dan gaul bersama kelapa parut, kuih ini juga boleh digoreng seperti membuat goreng pisang. Biasanya kuih ini apit antara keledek dan keladi dan celur dengan tepung goreng pisang, goreng deep fry. Rasanya memang enak, lebih-lebih apabila kuih bakul itu cair.
