MONDAY DINNER MENU - GULAI LEMAK IKAN, KACANG PANJANG GORENG UDANG KERING DAN TELUR DADAR

I'm back to work and back to the hectic schedule, can only prepare dinner for the children, then again it depends on the work load. If I have to work late then, I will take them out for dinner. It's still school holiday, I have to be home early. The children get hungry easily during this holiday season. My dinner for Monday was, Gulai Lemak Ikan, Stir Fried String Beans With Dried Shrimps and Omelette.


Gulai Lemak Ikan


Stir Fried String Beans With Dried Shrimps

INGREDIENTS
1 slice red snapper/ 4 potong ikan merah
1 cup cooking oil/ 1 cawan minyak masak
3 cups thick coconut milk/ 3 cawan santan pekat
1 cup water/ 1 cup water
2 lemon grass smashed/ 2 batang serai, memarkan
1 turmeric leaf cut into 4 /1 lembar daun kunyit potong 4
3 asam keping /3  asam keping
3 salam leaf -local bay leaf/ 3 lembar daun salam
5 kaffir leaf/ 5 lembar daun ;imau nipis
Salts to tase/Garam secukupnya
Blended Ingredients
11 cili padi/ 11 cili padi
11 shallot / 11 ulas bawang merah
5 tbsp corriander dry fried first/5 sdb ketumbar disangrai dahulu
2 inch ginger/ 2 inch halia
1 inch galangal/ 1 inch lengkuas
2 inch turmeric root/ 2 inch kunyit hidup.
METHOD

  1. Wash fish thoroughly/ Bersihkan ikan
  2. Heat up oil and saute blended ingredients till fragrant. Add in coconut milk, lemongrass, kaffir leaf, tumeric leaf, salam leaf and salts to taste. Add water when necessary. Add fish, asam keping and continue simmer until fish is done./Panaskan minyak dan tumis bahan yang diblend tadi. Masukkan serai, daun limau perut, daun salam daun kunyit dan garam secukup rasa. Masukkan santan dan kacaukan rata sehingga agak pekat. Perlahankan api dan masukkan ikan dan asam keping. Tambah air jika perlu. Didihkan sehingga ikan masak. Sedia dihidang.

Resipi Gulai Lemak ini agak berbeza dengan Masak Lemak Cili Padi. Resipi ini adalah ala-ala Masakan Padang yang menggunakan ketumbar. Memang enak dan sedap makan panas-panas.
