AYAM MASAK LEMAK CILI PADI


Ayam Masak Lemak Cili Padi can be categorised as a kampung dish popular among the Negeri Sembilan people. By the name the dish is obviously hot and creamy using a lot of cili padi bird's eyes chilies and coconut milk. The dish can be substitued with beef, prawn and fish. I used lemongrass and kaffir leaf to increase the aroma of the dish and some potatoes. Depending on one's preference, eggplant can also be another option to be added.



Ayam Masak Lemak Cili Padi

INGREDIENTS
1 chicken cut into 16 / 1 ekor ayam potong 16
2 stalk lemongrass - smashed / 2 batang serai dititik
5 kaffir leaves / 5 helai daun limau purut
5 potatoes cut into 4 / 5 biji kentang potong 4
2 pcs asam keping / 2 asam keping
2 cups thick coconut milk / 2 cawan santan pekat
3 cups thin coconut milk / 3 cawan santan cair
Blended Ingredients
23 bird's eyes chillies / 23 biji cili padi
2 onions/ 2 biji bawang besar
2" turmeric root / 2 " kunyit hidup


Blend all ingredients into paste./ Blend semua bahan.

METHOD

  1. In a pot combine chicken, potatoes, lemongrass, kaffir leaves, blended ingredients, thin coconut milk, and asam keping.  Bring to boil. Add in salts to taste./ Satukan ayam, kentang, serai, daun limau, bahan-bahan blended, santan cair dan asam keping dalam periuk dan masak atas kecil sehingga ayam dan kentang agak empuk. Masukkan garam secukup rasa.
  2. Simmer on low heat until potatoes and chicken are done. Add in thick coconut milk and continue simmer until the gravy thickens. Off heat and ready to serve./ Terus didihkan hingga ayam dan kentang betul masak. Masukkan santan pekat dan biarkan didih sehingga kuah agak pekat. Padamkan api dan sedia dihidang.

Masakan orang Nogori, menjadi favorite keluarga. Biasanya lagi pedas, lagi bagus, tetapi untuk anak-anak kena pandai balance pedasnya. Biasanya kalau ayam masak lemak cili padi ini saya akan masukkan kentang, tambah umpphh jadinya.
