No.....no...this is not our breakfast, it's too heavy for breakfast, this was our weekend dinner last week. Today I take a break..we had our breakfast at the mamak stall. I've been craving for onion dosa and had it with dried curry chicken and coconut chutney in one of my favourite's mamak stall.
This Fried Tom Yam Spaghetti is a "copycat" recipe from my favourite's cafe Winter Summer, spaghetti fried with "tom yam" paste" and seafood. I used mussels, shrimps and salmon fillet. Scrumptious and delectable and really knock your socks off. Trust me!!! squeeze some lime it makes wonders to your dinner.
Fried Seafood Tom Yum Spaghetti

1/2 packet spaghetti
150g, salmon fillet, skin removed and cut to bite-sized chucks
12 pieces mussels
2 tbsp tom
yum paste, mixed with 200ml hot water (adjust the tom yum paste according to
your preference)
3
lemongrass stalks, cut to 2 inch lengths, make slits on the stalks to release
the aroma
3 kaffir leaves thinly slice
3 clove garlic- choppeed
1 tbsp fish sauce
salts and sugar to taste

Directions
- Cook spaghetti as per instruction and set aside.
- In a wok, heat some oil and stir fry the garlic & lemon grass stalks till fragrant. Then add the salmon pieces, mussels and prawns, stir fry till everything is cooked. Set aside on a plate.
- Return the lemongrass stalks to the wok. Add the spaghetti followed by the tom yum mixture. The noodles should be fully soaked in the tom yum paste.Add water is necessary.
- Cook till the noodles have soaked up all the water, and is of a dry consistency (about 7 minutes). Then stir in the kaffir leaves and seafood that you set aside in step 2 and stir thoroughly.Add fish sauce and seasoning. You may wish to use tongs so that the noodles are easier to handle.
- Serve spaghetti in a plate and garnish with chopped coriander leaves and a cut lime if desired.
Wow...wow.. relax..ini bukan menu sarapan pagi saya...ini terlalu berat buat sarapan pagi. Spaghetti ini saya buat pada hujung minggu lepas...Pagi ini dapur saya rehat sebentar..breakfast kat luar aje hari ini. Tekak nak makan dosa (tosai)..makan dikedai favourite saya. Tertunai sudah hajat dihati kena dosa dengan kari kering ayam...puas rasanya..lama dah mengidam nak makan. Ok balik kepad spaghetti ini, saya gunakan tom yam paste untuk menggorengnya. Bahan seafood pula saya masukkan kupang, udang dan isi salmon. Masukkan serai dan daun limau perut..memang bangkit rasanya. Sedap dan kalau hendak pedas tambah aje cili padi.
